Marinated Carrot Strips

Total Time: 8 mins Preparation Time: 5 mins Cook Time: 3 mins

Ingredients

  • 4 large carrots
  • 1/2 cup red wine vinegar
  • 2 teaspoons sugar

Recipe

  • 1 with a vegetable peeler, peel carrots, halve lengthwise, then cut into 2 by 1/4 inch strips.
  • 2 in a medium saucepan of boiling salted water, cook carrots 2-3 minutes, until bright orange and just slightly softened.
  • 3 drain and rinse briefly under cold running water.
  • 4 place warm carrot strips in a small bowl. add vinegar and sugar; toss to combine.
