Marinated Carrot Strips

Ingredients
- 4 large carrots
- 1/2 cup red wine vinegar
- 2 teaspoons sugar
Recipe
- 1 with a vegetable peeler, peel carrots, halve lengthwise, then cut into 2 by 1/4 inch strips.
- 2 in a medium saucepan of boiling salted water, cook carrots 2-3 minutes, until bright orange and just slightly softened.
- 3 drain and rinse briefly under cold running water.
- 4 place warm carrot strips in a small bowl. add vinegar and sugar; toss to combine.
- 5 cover and refrigerate until ready to serve. drain before serving.
