Eggnog Muffins

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 3 cups flour
  • 1/2 cup sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1 egg
  • 1 3/4 cups eggnog
  • 1/2 cup vegetable oil
  • 1/2 cup raisins
  • 1/2 cup chopped pecans

Recipe

  • 1 combine dry ingredients in lg bowl.
  • 2 in another bowl, mix egg, eggnog, and oil.
  • 3 stir wet ingredients into dry ingredients, just until moistened.
  • 4 fold in raisins and pecans.
  • 5 fill greased or lined muffin cups two thirds full.
  • 6 bake at 350* for 25 minutes. cool for 5 minutes before removing from pan. cool completely on a wire rack.
