Eggnog Muffins

Ingredients
- 3 cups flour
- 1/2 cup sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 1 egg
- 1 3/4 cups eggnog
- 1/2 cup vegetable oil
- 1/2 cup raisins
- 1/2 cup chopped pecans
Recipe
- 1 combine dry ingredients in lg bowl.
- 2 in another bowl, mix egg, eggnog, and oil.
- 3 stir wet ingredients into dry ingredients, just until moistened.
- 4 fold in raisins and pecans.
- 5 fill greased or lined muffin cups two thirds full.
- 6 bake at 350* for 25 minutes. cool for 5 minutes before removing from pan. cool completely on a wire rack.
