Weight Watchers Spinach-caramelized Onion Salad (1 Point)

Ingredients

  • 4 teaspoons light stick butter
  • 1 lb sweet onion, thinly sliced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup reduced-sodium chicken broth
  • 1 cup grape tomatoes
  • 2 tablespoons red wine vinegar
  • 1/2 head chicory lettuce, torn into 1-inch pieces
  • 6 ounces baby spinach

Recipe

  • 1 melt the butter in a large nonstick skillet over medium-high heat. add the onions, salt, and pepper; cook, covered, stirring occasionally, until softened, about 8 minutes. cook, uncovered, stirring frequently, until golden brown and caramelized, about 8 minutes longer.
  • 2 remove the skillet from heat; stir in the broth, tomatoes, and vinegar.
  • 3 to make the salad, place the chicory in a large bowl. add the onion mixture and toss to coat. add the spinach; toss and serve at once.
