Welliver's Cream Of Onion Soup

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 1/4 cup butter or 1/4 cup margarine
  • 1 cup onion, chopped
  • 1/4 cup green onion, thinly sliced
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 cups milk
  • 1/2 cup chicken broth
  • 1 1/2 cups half-and-half or 1 1/2 cups light cream
  • crouton (optional)

Recipe

  • 1 in a 3-quart saucepan, melt butter or margarine; add onions.
  • 2 cover and cook over medium-low heat for 15 minutes, stirring occasionally, until onions are very tender.
  • 3 stir in the flour, salt and pepper. add milk and chicken broth. cook and stir till thickened and bubbly. cook and stir for 1 minutes more.
  • 4 add cream. cook and stir till heated through.
  • 5 top with croutons, if desired.
