Village Style Spinach

Total Time: 1 hr 3 mins Preparation Time: 30 mins Cook Time: 33 mins

Ingredients

  • Servings: 4
  • 1 kg fresh spinach
  • 2 large potatoes
  • 1 cup milk
  • 1 cup grated cheese
  • 1 beaten egg
  • 50 g butter
  • salt and black pepper

Recipe

  • 1 boil spinach and let drain.
  • 2 boil potatoes until soft.
  • 3 peel potatoes.
  • 4 mash potatoes, mixing in softened butter, 1/2 cup milk, salt and pepper.
  • 5 add some salt to drained spinach.
  • 6 arrange spinach and mash in layers in a staight-sided baking dish, starting with spinach and mash on top.
  • 7 mix rest of milk and egg, and pour milk mixture over the layers.
  • 8 sprinkle grated cheese on top.
  • 9 bake at 150 c for half an hour.
  • 10 brown top under grill for 3 minutes.
  • 11 serve immediately on toasted whole-wheat bread slices.
