Wow! I Made Good Stuffed Mushrooms!

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 3
  • 12 large mushroom caps
  • 2 scallions, chopped fine
  • 2 slices bacon, chopped fine
  • 2 teaspoons olive oil
  • 1 garlic clove, minced
  • 1/2 teaspoon italian seasoning
  • 4 drops tabasco jalapeno sauce
  • 2 tablespoons plain breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons wine
  • 1/4 cup shredded mozzarella cheese
  • salt and pepper

Recipe

  • 1 remove stems from mushrooms.
  • 2 finely dice 1/2 of the stems.
  • 3 mix together the breadcrumbs and parmesan cheese in a small bowl.
  • 4 heat the oil in a small skillet on medium high.
  • 5 add diced mushroom stems, scallions, garlic, bacon (i use oscar meyer pre-cooked), italian seasoning, tabasco, and salt and pepper to taste.
  • 6 once the onions are soft, add the entire mixture to the breadcrumbs and cheese.
  • 7 stir until incorporated.
  • 8 add wine until the breadcrumb mixture is moist (may take more or less wine).
  • 9 stuff mushrooms, slightly mounding with stuffing mixture.
  • 10 place mushrooms in oven proof dish.
  • 11 sprinkle with mozarella cheese.
  • 12 bake at 450 degrees for 15 minutes or until the mozarella melts and is bubbly.
