Texas Caviar

Ingredients

  • 1 cup celery, chopped
  • 1 small onion, chopped
  • 1 cup green pepper, chopped
  • 1 (14 ounce) can shoepeg corn
  • 1 (14 ounce) can pinto beans
  • 1 (14 ounce) can black-eyed peas
  • 1 (2 ounce) jar pimientos (small)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon water
  • 3/4 cup vinegar
  • 1/2 cup oil
  • 1 cup sugar

Recipe

  • 1 drain and rinse all canned veggies.
  • 2 chop all veggies and place in a container.
  • 3 pour sauce (recipe below) over vegetables in the container and marinade mixture overnight.
