Weight Watchers Squash And Tomato Saute

Total Time: 18 mins Preparation Time: 10 mins Cook Time: 8 mins

Ingredients

  • 2 teaspoons olive oil
  • 1 zucchini (halved and sliced)
  • 1 yellow squash (halved and sliced)
  • 1/2 teaspoon salt
  • 1 garlic clove (minced)
  • 1 tomato (chopped)
  • 2 tablespoons fresh basil (chopped)
  • 1/4 teaspoon ground pepper
  • 2 tablespoons parmesan cheese (grated)

Recipe

  • 1 heat oil in large skillet. add zucchini, squash, salt and saute 5 minutes or when crisp tender.
  • 2 add garlic saute for 30 seconds, stirring constantly.
  • 3 add tomato and cook 1 minute until headed through.
  • 4 stir in basil and pepper.
  • 5 sprinkle with parmesan.
  • 6 serve immediately.
