Sweet And Spicy Lamb Stir Fry

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 red pepper
  • 1 small red onion
  • 1 head broccoli
  • 2 garlic cloves
  • 14 ounces pineapple tidbits, packed in their own juice
  • 1 tablespoon cornstarch
  • 1/2 cup hoisin sauce
  • 1 lime
  • 1/2-1 teaspoon chili flakes
  • 1 lb lamb tenderloin or 1 lb lamb, stir fry strips
  • 2 teaspoons vegetable oil
  • 1/4 cup chopped fresh coriander (optional)

Recipe

  • 1 cut onion into long thin strips.
  • 2 core pepper and slice in thin long strips.
  • 3 cut broccoli into bite size pieces.
  • 4 finely mince garlic.
  • 5 drain juice from pineapple into a 2 cup measuring cup.
  • 6 stir cornstarch into pineapple juice until dissolved.
  • 7 stir in hoisin sauce.
  • 8 cut lime and squeeze juice into pineapple mixture.
  • 9 stir in chili flakes.
  • 10 slice lamb in bite size strips.
  • 11 heat oil in frying pan over med heat.
  • 12 add lamb and stir fry until cooked through about 4 minute.
  • 13 add onion,pepper,broccoli and garlic,continue to cook 2 minute.
  • 14 add pineapple until heated through.
  • 15 stir juice mixture,then add to pan.
  • 16 cook,stirring continuously,until liquid is bubbling and thickened 2-3 minute.
  • 17 remove from heat and stir in corriander.
  • 18 great with rice noodles or steamed rice.
