Waldorf Sweet Potato Salad

Ingredients

  • Servings: 6
  • 1/3 cup walnuts
  • 3 cups sweet potatoes, peeled and grated
  • 1 red apple, chopped (unpeeled, cored and coarsely chopped)
  • 1/2 cup celery, chopped
  • 1/2 cup red seedless grapes, halved
  • 1/3 cup blue cheese, crumbled (optional)
  • 3 tablespoons apple juice
  • 2 tablespoons vegetable oil
  • 1 tablespoon wine vinegar
  • 1 teaspoon wine vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt

Recipe

  • 1 toast walnuts in oven at 350 degrees until golden, about 10 minutes. cool. place walnuts, sweet potatoes, apple celery, grapes and blue cheese (if desired) in a large bowl.
  • 2 to make dressing, whisk apple juice, oil, vinegar, sugar and salt until blended. pour over salad and toss well. serve on a platter lined with red leaf lettuce.
