Sweet Cornbread

Ingredients

- 2 cups flour
- 1 cup cornmeal
- 3/4 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 cup buttermilk
- 1/3 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla
Recipe
- 1 heat oven to 375.
- 2 spray loaf or muffin pans.
- 3 mix flour, cornmeal, sugar, baking powder, salt and baking soda.
- 4 make a well in the flour and whisk in buttermilk.
- 5 mix oil, eggs and vanilla in a small bowl and add to the flour mixture.
- 6 whisk just until moistened.
- 7 can add fresh or frozen blueberries if desired.
- 8 bake at 375 for 25-30 minutes.
