Beans Italian Style

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 teaspoons olive oil
  • 2 garlic cloves, minced
  • 1/2 teaspoon dried sage
  • 1 (16 ounce) can whole peeled tomatoes with juice, chopped, juices reserved
  • 1 (19 ounce) can cannellini beans, rinsed and drained
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 teaspoon fresh lemon juice or 1 teaspoon red wine vinegar
  • 1 tablespoon finely chopped fresh parsley

Recipe

  • 1 in a medium saucepan, heat oil. add garlic and sage and cook until garlic softens, about 30 seconds.
  • 2 add drained chopped tomatoes and reserved tomato juice. cover over medium heat for 5 minutes.
  • 3 add beans to saucepan. season to taste with salt and pepper.
  • 4 simmer, uncovered, over low heat, stirring occasionally, until beans are hot, about 5 minutes.
  • 5 stir in lemon juice and parsley and serve.
