Tabouli

Ingredients

  • Servings: 12
  • 1 cup bulgar wheat, dry
  • 2 cups boiling water
  • 1 1/2 teaspoons salt
  • 1/4 cup lemon juice
  • 1 teaspoon garlic
  • 1/2 teaspoon mint, fresh
  • 1/4 cup olive oil
  • salt and pepper, to taste
  • 1/4 cup scallion, chopped (including greens)
  • 2 tomatoes, diced
  • 1 cup parsley, chopped
  • 1/2 cup chickpeas, canned
  • 1 cucumber, chopped

Recipe

  • 1 cook bulgur wheat.
  • 2 when it is done, add lemon juice, garlic, oil, mint, salt and pepper, and mix thoroughly. refrigerate 2-3 hours.
  • 3 just before serving, add the vegetables and mix.
