Wild Mushroom-hazelnut Medley

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 tablespoons sherry wine
  • 1 tablespoon sesame oil
  • 1 teaspoon chinese five spice powder
  • 1/2 teaspoon sea salt
  • 1 1/2 lbs wild mushrooms, trimmed and thickly sliced
  • 1/2 cup coarsely chopped hazelnuts, toasted
  • 1/4 cup italian parsley, chopped
  • fresh ground black pepper

Recipe

  • 1 preheat oven to 450°f.
  • 2 in large bowl, combine sherry, sesame oil, five-spice powder, and salt. add mushrooms and mix well.
  • 3 place mushroom mixture in nonstick roasting pan in single layer.
  • 4 roast for 8 minutes. stir in hazelnuts, roast until just tender, another 3-5 minutes stir in parsley. adjust salt and pepper.
  • 5 serve hot.
