Weeki Wachee Roll Up

Ingredients

- 1/2 cup cream cheese, softened
- 1/2 teaspoon dried chives
- 4 (10 inch) whole wheat tortillas
- 1/2 cup hummus
- 1 cup shredded carrot
- 1/2 cup mixed sprouts
- 1/2 cup sliced cherry tomatoes
- 4 leaves romaine lettuce, thinly sliced
- 1/2 cup crumbled feta or 1/2 cup grated mozzarella cheese
Recipe
- 1 in a small bowl, combine cream cheese and chives. using a small spatula, spread the cream cheese mixture evenly over each tortilla within about 1 inch of the edge.
- 2 spread a thin layer of hummus over the cream cheese. layer carrots, sprouts, tomatoes, and lettuce and then sprinkle with cheese. carefully roll up each tortilla.
- 3 wrap each tortilla roll tightly in plastic wrap and chill for at least 30 minutes or until ready to serve.
- 4 to service slice each roll into 3 pieces.
