Vinegar & Salt French Fries

Ingredients

- 1 1/4 lbs baking potatoes, peeled (about 2)
- 3 cups water
- 2 tablespoons distilled vinegar, plus
- 2 teaspoons distilled vinegar, divided
- 1 tablespoon canola oil
- salt
Recipe
- 1 cut potatoes lengthwise into 1/4 inch slices, then into matchsticks.
- 2 combine water and 2 tablespoons vinegar in a large bowl.
- 3 completely submerge potatoes in vinegar mixture.
- 4 soak for 30 minutes.
- 5 preheat oven to 400 degrees (or deep fry).
- 6 drain potatoes on paper towels.
- 7 transfer to a clean dry bowl.
- 8 toss with canola oil.
- 9 arrange potatoes on heavy gauge nonstick baking sheet in single layer.
- 10 bake for 20 minutes, or until potatoes just begin to brown.
- 11 turn and bake for 10 minutes, or until browned and crisp.
- 12 toss with 2 teaspoons vinegar and salt to taste.
