Vinegar & Salt French Fries

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 1/4 lbs baking potatoes, peeled (about 2)
  • 3 cups water
  • 2 tablespoons distilled vinegar, plus
  • 2 teaspoons distilled vinegar, divided
  • 1 tablespoon canola oil
  • salt

Recipe

  • 1 cut potatoes lengthwise into 1/4 inch slices, then into matchsticks.
  • 2 combine water and 2 tablespoons vinegar in a large bowl.
  • 3 completely submerge potatoes in vinegar mixture.
  • 4 soak for 30 minutes.
  • 5 preheat oven to 400 degrees (or deep fry).
  • 6 drain potatoes on paper towels.
  • 7 transfer to a clean dry bowl.
  • 8 toss with canola oil.
  • 9 arrange potatoes on heavy gauge nonstick baking sheet in single layer.
  • 10 bake for 20 minutes, or until potatoes just begin to brown.
  • 11 turn and bake for 10 minutes, or until browned and crisp.
  • 12 toss with 2 teaspoons vinegar and salt to taste.
