Tuna, Bean And Roasted Pepper Salad With Creamy Dijon Dres

Ingredients

  • Servings: 4
  • 1/4 cup mayonnaise
  • 1/4 cup olive oil (or to your taste)
  • 3 tablespoons dijon mustard
  • 2 tablespoons champagne vinegar (or vinegar)
  • 5 cups fresh baby greens
  • 1 (15 ounce) can small beans, rinsed and drained
  • 2/3 cup roasted red pepper, drained (jarred)
  • 1/3 cup red onion, chopped
  • 1 (12 ounce) can chunk light tuna (packed in water or oil)
  • 2/3 cup kalamata olive, pitted and halved

Recipe

  • 1 whisk first 4 ingredients in a small bowl. season dressing with salt and pepper.
  • 2 toss greens in a large bowl with enough dressing to coat. divide greens among plates. toss beans, red peppers, and onion in a medium bowl with enough dressing to coat. top greens with bean mixture, then tuna, dividing equally. garnish with olives.
