Tricolor Tomato Salad

Ingredients
- Servings: 4
- 1 tablespoon fresh lime juice (about 1 lime)
- 1/2 teaspoon lime zest (about 1/2 lime)
- 1/8 teaspoon cayenne pepper
- 1 cup sour cream
- 1/4 teaspoon salt (to taste)
- 8 roma tomatoes, cored and chopped into chunks and then drained
- 8 ounces basil pesto, at room temperature
- 3/4 cup pine nuts, toasted and chopped
- 4 sprigs fresh basil, for garnish
Recipe
- 1 in a small bowl, combine the lime juice, zest, cayenne, sour cream and salt; cover and refrigerate 4 to 6 hours.
- 2 arrange tomato chunks in 4 footed margarita glasses or small, clear dessert bowls.
- 3 spoon a thin layer of pesto over each, spreading it to the edges so it shows through the outside of the glass.
- 4 spoon desired amount of sour cream mixture over and spread out to edges.
- 5 garnish with toasted pine nuts and a sprig of fresh basil.
