Toasted Pumpkin Seed Brittle

Ingredients

  • 3/4 cup granulated sugar
  • 1/4 cup corn syrup
  • 1 cup toasted pumpkin seeds
  • 1 tablespoon butter
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla

Recipe

  • 1 in a 8-cup measure, combine sugar, cornsyrup, water and toasted pumpkin seeds. microwave at high, uncovered, for 10-11 minuted or until medium-dark brown, without stirring.
  • 2 stir in butter, baking soda, and vanilla.
  • 3 immediately pour onto greased baking sheet, spreading out as much s possible and cool. the break into chunks.
  • 4 note: to toast pumpkin seeds, toss 1 cup seeds (unrinsed but pulp removed) with 1 tablespoons vegetable oil and salt to taste.
