Sweet Potato Balls

Ingredients

- 1 lb sweet potato
- 1 egg, beaten
- 1 small onion, minced
- 1 tablespoon milk
- 1 tablespoon butter
- 3/4 teaspoon ginger
- 2 tablespoons flour
- 1 tablespoon chopped fresh parsley
- 1 pinch cayenne
- 1/4 cup oil (for frying)
- 2 cups breadcrumbs
Recipe
- 1 cook sweet potatoes. mash them with everything except the oil and breadcrumbs.
- 2 heat the oil over medium heat. place the breadcrumbs in a bowl. form balls by dropping tablespoons full off sweet potato into the breadcrumbs and roll.
- 3 fry each (several at a time) in the oil, rolling to brown all sides. drain on paper towels. serve with a dark beer.
