Sweet Potato Balls

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 1 lb sweet potato
  • 1 egg, beaten
  • 1 small onion, minced
  • 1 tablespoon milk
  • 1 tablespoon butter
  • 3/4 teaspoon ginger
  • 2 tablespoons flour
  • 1 tablespoon chopped fresh parsley
  • 1 pinch cayenne
  • 1/4 cup oil (for frying)
  • 2 cups breadcrumbs

Recipe

  • 1 cook sweet potatoes. mash them with everything except the oil and breadcrumbs.
  • 2 heat the oil over medium heat. place the breadcrumbs in a bowl. form balls by dropping tablespoons full off sweet potato into the breadcrumbs and roll.
  • 3 fry each (several at a time) in the oil, rolling to brown all sides. drain on paper towels. serve with a dark beer.
