Pickled Red Onions

Ingredients
- 2 tablespoons vegetable oil
- 2 medium red onions, halved and thinly sliced
- 1 tablespoon red wine vinegar
- 1/2 teaspoon dried oregano
- 1/2 teaspoon sugar
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Recipe
- 1 in a large non-reactive skillet, heat oil over medium-high heat.
- 2 add red onions and cook, stirring occasionally, until softened, about 2 minutes.
- 3 add vinegar, oregano, sugar, salt and pepper.
- 4 cook, stirring, until limp and tender, 2-3 minutes. serve hot.
