Ingredients

- 1 (15 ounce) can corn
- 1 (15 ounce) can black beans
- 1/2 of a purple onion, diced fine
- 1 red pepper, diced fine
- fresh cilantro
- 1 tablespoon lime zest
- 1 lime, juice of
- 6 teaspoons olive oil
- salt and pepper
Recipe
- 1 mix all of the ingredients together and let sit overnight (or at least several hours).
