Ww 6 Points - Black Bean, Avocado, And Tomato Tacos

Ingredients

  • Servings: 4
  • 8 taco shells (preferably trans-fat-free) or 8 tostadas (preferably trans-fat-free)
  • 1 (16 ounce) can black beans, rinsed and drained
  • 1 medium tomato, cored and chopped
  • 1/2 yellow bell peppers or 1/2 orange bell peppers or 1/2 red bell pepper, cored, seeded, and chopped
  • 1/2 small avocado, diced
  • 4 scallions, finely chopped
  • 2 tablespoons cilantro, chopped fresh
  • 1 tablespoon fresh lime juice
  • 2 teaspoons olive oil
  • 1 teaspoon fajita seasoning mix (preferably salt free or low sodium)

Recipe

  • 1 heat taco shells according to package directions and keep warm.
  • 2 combine the remaining ingredients in a medium bowl.
  • 3 to serve, spoon 1/4 cup of mixture onto each taco.
  • 4 6 points per serving (2 tacos).
