Oat Bran Muffins

Ingredients

- 2 cups quaker oat bran hot cereal, uncooked
- 1/4 cup brown sugar, firmly packed
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup skim milk
- 2 eggs, slightly beaten
- 1/4 cup honey or 1/4 cup molasses
- 2 tablespoons vegetable oil
- 1 cup raisins (optional) or 1/2 cup fresh blueberries (optional) or 1/2 cup frozen blueberries (optional)
Recipe
- 1 heat oven to 425*.
- 2 line 12 medium muffin cups with paper baking cups or spray bottoms only with no stick cooking spray.
- 3 combine the dry ingredients; mix well.
- 4 add combined milk, eggs, honey and oil; mix just until moistened.* fill prepared muffin cups ¾ full.
- 5 bake 15 to 17 minutes or until golden brown.
- 6 yield: 12 muffins.
