Egg, Poblano And Avocado Scramble (ww)

Ingredients

- 2 teaspoons olive oil
- 2 poblano peppers, cut into 1/2 inch strips
- 1 onion, chopped
- 1 cup egg beaters egg substitute
- 2 tablespoons cilantro, chopped
- 1/4 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 avocado, peeled, pitted, and diced
Recipe
- 1 heat oil in sillit over medium high heat. add chilies and onion, stirring occasionally for 5 minutes or until vegetables soften.
- 2 meanwhile whisk together egg beaters, cilantro, cumin, salt and pepper in bowl.
- 3 pour egg mixture over chili mixture. reduce heat and cook, stirring frequently until eggs are set (3-5 minutes). remove from heat and stir in avocado.
