Zucchini Bread

Total Time: 57 mins Preparation Time: 2 mins Cook Time: 55 mins

Ingredients

  • Servings: 6
  • 2 cups bisquick
  • 1 1/2 cups shredded zucchini (1 medium)
  • 3/4 cup sugar
  • 1/4 cup vegetable oil
  • 3 eggs
  • 1 teaspoon vanilla
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/2 cup chopped nuts

Recipe

  • 1 heat oven to 350°f and grease the bottom of 9x5x3-inch loaf pan. beat all ingredients in medium bowl with electric mixer at low speed for 30 seconds, scraping bowl constantly.
  • 2 beat at medium speed for 1 minute, scraping bowl occasionally.
  • 3 pour into pan.
  • 4 bake 50 to 55 minutes or until toothpick comes out clean.
  • 5 cool 10 minutes.
  • 6 loosen sides of pan and remove and place on wire rack top side up.
  • 7 cool completely for about 2 hours before slicing.
