Zucchini Bread

Ingredients

- 2 cups bisquick
- 1 1/2 cups shredded zucchini (1 medium)
- 3/4 cup sugar
- 1/4 cup vegetable oil
- 3 eggs
- 1 teaspoon vanilla
- 2 teaspoons cinnamon
- 1 teaspoon nutmeg
- 1/2 cup chopped nuts
Recipe
- 1 heat oven to 350°f and grease the bottom of 9x5x3-inch loaf pan. beat all ingredients in medium bowl with electric mixer at low speed for 30 seconds, scraping bowl constantly.
- 2 beat at medium speed for 1 minute, scraping bowl occasionally.
- 3 pour into pan.
- 4 bake 50 to 55 minutes or until toothpick comes out clean.
- 5 cool 10 minutes.
- 6 loosen sides of pan and remove and place on wire rack top side up.
- 7 cool completely for about 2 hours before slicing.
