Zucchini Bread

Ingredients
- 4 cups shredded zucchini
- 3 cups all-purpose flour
- 2 1/2 cups sugar
- 1 1/4 cups vegetable oil
- 4 beaten eggs
- 1 tablespoon vanilla, plus
- 1 teaspoon vanilla
- 1 tablespoon ground cinnamon
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1 cup nuts (optional)
Recipe
- 1 preheat oven to 325.
- 2 grease generously bottoms of 2 loaf pans.
- 3 blend all ingredients on low 1 minute.
- 4 beat at medium speed 1 minute.
- 5 pour into pans.
- 6 bake 45-50 minutes until toothpick comes out clean.
- 7 cool and enjoy!
