Zucchini Bread

Total Time: 1 hr Preparation Time: 10 mins Cook Time: 50 mins

Ingredients

  • 4 cups shredded zucchini
  • 3 cups all-purpose flour
  • 2 1/2 cups sugar
  • 1 1/4 cups vegetable oil
  • 4 beaten eggs
  • 1 tablespoon vanilla, plus
  • 1 teaspoon vanilla
  • 1 tablespoon ground cinnamon
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1 cup nuts (optional)

Recipe

  • 1 preheat oven to 325.
  • 2 grease generously bottoms of 2 loaf pans.
  • 3 blend all ingredients on low 1 minute.
  • 4 beat at medium speed 1 minute.
  • 5 pour into pans.
  • 6 bake 45-50 minutes until toothpick comes out clean.
  • 7 cool and enjoy!
