Ingredients

- 3 cups cherry tomatoes, cut into halves (or larger ones can be cut into quarters)
- 1 large green bell pepper, seeded and chopped coarsely
- 1 large red onion, finely chopped
- 1/4 cup cider vinegar
- 1/2 teaspoon salt
- 1 1/2 teaspoons mustard seeds
- 1 1/2 teaspoons celery seeds
- 4 teaspoons sugar
- 1/8 teaspoon ground cayenne pepper
- 1/2 teaspoon black pepper
- 1/4 cup water
Recipe
- 1 in a large bowl, combine the tomatoes, bell pepper and onion. toss to mix.
- 2 mix together the vinegar, salt, mustard seed, celery seed, sugar, cayenne pepper, black pepper and water in a small saucepan and bring to a boil. after boiling for 1-2 minutes, pour the mixture over the tomato / pepper / onion mixture.
- 3 once cool, place in a tightly covered dish and refrigerate for at least 4 hours before serving. will store up to 48 hours refrigerated.
