Zucchini Honey Bread

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 12
  • 3 cups flour
  • 1 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup pecans, chopped
  • 2 cups zucchini, shredded
  • 2 large eggs, lightly beaten
  • 1 1/2 cups sugar
  • 2 teaspoons vanilla extract
  • 3/4 cup honey
  • 1 cup vegetable oil

Recipe

  • 1 combine dry ingredients, combine zucchini and remaining ingredients in another bowl.stirring well.add to dry flour ingredients.just till dry ingredients are moistened.
  • 2 spoon batter into 2 greased and floured 8x4" pans.
  • 3 bake at 350* for 1 hour and 10 minutes or wooden toothpick comes out clean when inserted near the center.
  • 4 cool in pan on rack for 10 minutes.
  • 5 remove from pan and complete cooling.
