Zucchini Bread

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 3 eggs
  • 1 1/2 cups sugar
  • 2 teaspoons vanilla
  • 1/2 cup vegetable oil
  • 2 cups grated and drained zucchini
  • 2 cups flour
  • 1/4 teaspoon baking powder
  • 2 teaspoons baking soda
  • 3 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 cup raisins
  • 1 cup chopped walnuts

Recipe

  • 1 in large bowl, combine eggs, sugar, vanilla, oil, and zucchini; beat well.
  • 2 in small bowl, sift together flour, powder, soda, cinnamon, and salt.
  • 3 add to zucchini and mix well.
  • 4 stir in raisins and walnuts.
  • 5 pour into 2 greased and floured loaf pans. don't overfill.
  • 6 bake at 375 f for about 1 hour or until toothpick comes out clean.
  • 7 cool 15 minute and then turn out onto racks to cook completely.
  • 8 freezes well.
