Zucchini Bread

Ingredients
- 3 eggs
- 1 1/2 cups sugar
- 2 teaspoons vanilla
- 1/2 cup vegetable oil
- 2 cups grated and drained zucchini
- 2 cups flour
- 1/4 teaspoon baking powder
- 2 teaspoons baking soda
- 3 teaspoons cinnamon
- 1 teaspoon salt
- 1 cup raisins
- 1 cup chopped walnuts
Recipe
- 1 in large bowl, combine eggs, sugar, vanilla, oil, and zucchini; beat well.
- 2 in small bowl, sift together flour, powder, soda, cinnamon, and salt.
- 3 add to zucchini and mix well.
- 4 stir in raisins and walnuts.
- 5 pour into 2 greased and floured loaf pans. don't overfill.
- 6 bake at 375 f for about 1 hour or until toothpick comes out clean.
- 7 cool 15 minute and then turn out onto racks to cook completely.
- 8 freezes well.
