Twice As Nice Coconut Rice

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 teaspoon vegetable oil
  • 2 teaspoons fresh ginger
  • 1 minced garlic clove
  • 1 1/2 cups long grain rice
  • 3/4 cup light coconut milk
  • 1 teaspoon honey
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt

Recipe

  • 1 heat oil in a medium, non-stick saucepan over medium heat.
  • 2 add ginger and garlic -- cook and stir for one minute.
  • 3 add rice and cook for one more minute.
  • 4 stir in the coconut milk, 2 1/4 cups of water, honey, lemon zest and salt.
  • 5 bring to a boil then reduce heat to medium low.
  • 6 cover and simmer for 20 minutes or until liquid is absorbed and rice is tender. fluff rice with fork and serve.
