Twice As Nice Coconut Rice

Ingredients
- 1 teaspoon vegetable oil
- 2 teaspoons fresh ginger
- 1 minced garlic clove
- 1 1/2 cups long grain rice
- 3/4 cup light coconut milk
- 1 teaspoon honey
- 1 teaspoon lemon zest
- 1/2 teaspoon salt
Recipe
- 1 heat oil in a medium, non-stick saucepan over medium heat.
- 2 add ginger and garlic -- cook and stir for one minute.
- 3 add rice and cook for one more minute.
- 4 stir in the coconut milk, 2 1/4 cups of water, honey, lemon zest and salt.
- 5 bring to a boil then reduce heat to medium low.
- 6 cover and simmer for 20 minutes or until liquid is absorbed and rice is tender. fluff rice with fork and serve.
