Bean, Parsley And Garlic Mash

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 1/2 onion, chopped finely
  • 2 garlic cloves, chopped finely
  • 2 (14 ounce) cans cannellini beans, drained
  • 3 tablespoons vegetable stock or 3 tablespoons water
  • 3 tablespoons flat leaf parsley, chopped
  • salt and pepper

Recipe

  • 1 heat the oil in a saucepan and fry the onion gently for 5 minutes
  • 2 add the garlic and cook for another 2 mins until soft.
  • 3 tip the beans into the pan and mash roughly. add the stock or water to loosen.
  • 4 stir in the parsley and seasoning. serve.
