Zesty Tomato-garlic Fish

Ingredients

- 1 (14 1/2 ounce) can diced tomatoes or 1 (14 1/2 ounce) can ready-cut tomatoes
- 2 1/2 tablespoons lemon juice
- 2 teaspoons garlic salt
- 2 tablespoons olive oil
- 1/8 teaspoon ground black pepper
- 1 1/2 lbs cod fish fillets
- 2 tablespoons pine nuts, toasted
Recipe
- 1 preheat oven to 425 degrees.
- 2 in a 13x9x2-inch baking dish, combine tomatoes, lemon juice, garlic salt, olive oil and pepper; mix well.
- 3 top with fish fillets in a single layer.
- 4 spoon some tomato mixture over fish.
- 5 bake 15 minutes or until sauce is bubbling and fish flakes easily with a fork.
- 6 garnish with pine nuts.
