Wicklewood's Posh Lamb N Beans

Total Time: 1 hr 5 mins Preparation Time: 10 mins Cook Time: 55 mins

Ingredients

  • Servings: 4
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 1 garlic clove, crushed
  • 1 tablespoon tomato puree
  • 400 g chopped tomatoes
  • 100 ml vegetable stock
  • seasoning
  • 4 ounces bacon lardons
  • 400 g of mixed beans, rinsed and drained

Recipe

  • 1 in a skillet, heat the oil and gently fry the onion and garlic for 5 mins until soft.
  • 2 add the tom puree and cook for further 5 mins, stirring often.
  • 3 add the chopped tomatoes and vegetable stock and bring to the boil.
  • 4 reduce heat and cook out for 35-40 mins stirring occasionally.
  • 5 meanwhile, in a saucepan fry the bacon lardons until crispy.
  • 6 add the beans and sauce and stir together.
  • 7 cover and gently simmer for 5-10 mins until thick and syrupy.
